- Spring crop · March to May · Yen Bai, Lao Cai, Lang SonCassia bark is stripped from March to May, which is the main harvest of the year. Star anise flowers in spring and is picked much later.
- Autumn crop · August to November · Yen Bai, Lang Son, Cao BangSecond cassia bark season from August to October, and star anise from August to November. The autumn anise carries the stronger aroma.

Dried bark and anise keep, so orders run all year. Picking peaks twice, which is when the freshest material reaches the mills and when the price at the mill moves. Seasons follow the provincial agriculture departments in Yen Bai and Lang Son.
